Almond pancakes

What you'll need:

  • 1 cup It's Wholesome all-purpose baking mix Buy
  • 1 cup milk (non-dairy or dairy)
  • 1 teaspoon apple cider vinegar or one egg
  • 1/2 cup sliced almonds
  • 1 teaspoon almond extract (optional)
  • Oil or cooking spray


  1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray or 1 tablespoon oil.(Surface is ready when a few drops of water sprinkled on it dance and disappear.)
  2. Whisk all ingredients until blended.
  3. Fold almonds and almond extract into batter. Pour 1/4 cupfuls onto hot griddle.
  4. Cook until edges are golden and crisp. Flip and repeat. Center should become cooked through.
