High-protein banana bread

What you'll need:

  • 2 cups It's Wholesome high protein pancake and waffle mix Buy
  • 3/4 cup sugar
  • 1/2 cup dark brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup milk
  • 1 teaspoon apple cider vinegar
  • 2 ripe bananas, mashed
  • 1/4 cup oil
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat oven to 350°F and grease two 9” x 5” loaf pans.
  2. In a medium-sized mixing bowl, sift together the high protein mix, sugars, and cinnamon.
  3. In a large mixing bowl, whisk together the milk and cider vinegar and let stand for two minutes. Add the mashed banana, oil, maple syrup, and vanilla extract, whisking until well combined.
  4. Add the dry ingredients to the wet, mixing until just combined.
  5. Fold in the chocolate chips (if using) and pour the batter into the two prepared loaf pans.
  6. Bake for about 35-45 minutes, or until a toothpick inserted into the center emerges clean.
  7. Allow the bread to cool on a wire cooling rack for 20 minutes before serving.
  8. Serve warm or at room temperature.
