Vegan corn griddle cakes

What you'll need:

  • 1 cup It's Wholesome all-purpose baking mix Buy
  • 1 cup milk (non-dairy or dairy)
  • 1 teaspoon apple cider vinegar
  • 1/2 cup corn
  • 2 tablespoons onion, thinly sliced and minced
  • Black pepper, to taste
  • Oil or butter for cooking

Instructions:

  1. In a medium sized bowl, combine the all-purpose baking mix, milk and cider vinegar.
  2. Whisk well until there are no clumps of baking mix.
  3. Stir in the corn, onion and black pepper (and anything else you want to add).
  4. Heat up your skillet; add 1 tablespoon butter or oil.
  5. When butter or oil is hot, dollop batter into pan and spread into little cakes (like you make pancakes).
  6. Let cook until bubbling throughout the batter and browned on the bottom.
  7. Flip and cook until browned on the other side.
  8. Let cool slightly and then enjoy.
